This creamy tortellini and vegetable pasta is a real crowd pleaser. To make it even quicker, use frozen chopped vegetables instead of fresh. Serve with: A green salad and whole-grain baguette.

A great springboard for your own creativity

Added this to my recipe file with notes of what I did this time and what I'd like to do next time. Used two packages of tortellini--hubby wanted more sauce but nobody else complained. I stir-fried my fresh veggies (whites of green onions, carrots, zucchini and yellow squash) instead of boiling frozen, used lots of Mrs. Dash, oregano, thyme and fresh ground pepper. Didn't have any Fontina so used Parmesan and Havarti--possibly more than the recipe recommends. Served with chicken and sourdough toast and it was yummy! Next time, I might try making 1.5x more sauce. Loved the Havarti but might try Fontina. Otherwise, I was quite happy with our meal.

Good, but adjustments

I made this for dinner last night, but I needed to make a bunch of adjustments to make it yellow. First of all, I used whole wheat tortellini with spinach inside. The whole wheat is yellow, and less cheese means less reds. I also used light cheese because that is a yellow instead of full fat red cheese. My family still loved it, and I would recommend it. I used the color classification system at www.kurbo.com to make my adjustments

Quick, Easy & Healthy!

I prepared this dish from start to finish in less than 20 minutes and it tasted great! Will definitely make this one again!

Simple and yummy

Very yummy and simple dish. I added cauliflower to our dish. I also added a bit more fontina cheese & dill. Highly recommend!
