This creamy tortellini and vegetable pasta is a real crowd pleaser. To make it even quicker, use frozen chopped vegetables instead of fresh. Serve with: A green salad and whole-grain baguette.

AMAZING Dish!

My husband and I were WOWed by this dish. I'm always trying "quick, easy, healthy meals" and lots of time they are lacking flavor and appeal. I had some serious doubts about this one, even bought all the ingredients and pushed off making it for weeks since most of it comes frozen. But I finally made it for a late lunch/early dinner and we loved it. Next time I'm going to throw some grilled chicken on top to round it off. I don't mind no meat, but my husband needs a little something extra to fill up on. Can't wait to make it again!

AMAZING Dish!

Yummy!

Delicious! We only used 1/2 of the sauce-thought it tasted good with half. Might have overpowered it if we had used more. Will use the remaining sauce for pasta later in the week.

Really delicious! Had a nice taste to it.

With a little Cottage Cheese Twist

I followed the basic idea of the recipe, but changed around the cheeses. I used about 1/8 cup parmesan cheese, 1 cup nonfat small curd cottage cheese, & 1/8-1/4 cup fresh pearl mozzarella, drained. I added the parmesan cheese first & stirred it in then the cottage, followed by the mozzarella.
I also added 1 medium vine-ripe tomato, chopped and used 4 cups broccoli florets (next time I'd use more veggies or make the florets smaller).
I used fresh basil instead of the tarragon/dill/chives & garnished the dish with some as well.
