Summer Tomato, Onion & Cucumber Salad

July/August 2011

Your rating: None Average: 3.7 (139 votes)

Fresh wedges of tomato, thinly sliced onion and sliced cucumber dressed simply with vinegar and oil makes the most simple salad possible—think of it as the Southern counterpart to the classic Italian tomato-and-mozzarella salad. It is best enjoyed at the height of summer, when tomatoes and cucumbers are fresh from the garden.

One word - Dill

We make this all the time in the summer and we always add dill, a lot of dill.

Easy and fast
mouth watering!

This is the best recipe-and very versatile! We love this with the tomatoes/cucumbers/onions, however, it is super when all is combined with a pasta for pasta salad!!

All good
Great side or Entree Salad!

I was raised in New Orleans, and this is a staple at any time of the year!! We tossed the salad and let marinade overnight in the fridge....oh, and we also added fresh mushrooms, quartered, to the mix and, then marinate.

Absolutely love this salad! It tastes like summer and is so simple to make. I like to use roma tomatoes and english cucumber and typically use green onions or chives as the herb. Yum!

Quick, Easy & Delish
Quick and easy week-night salad.

My mother made this for years, since I was a little kid. She just used apple cider vinegar and a little water to dilute the vinegar then poured it over the tomato wedges, onion and cukes. Anyway you want to make it, it's great.

What's not to like about it.
