Fresh wedges of tomato, thinly sliced onion and sliced cucumber dressed simply with vinegar and oil makes the most simple salad possible—think of it as the Southern counterpart to the classic Italian tomato-and-mozzarella salad. It is best enjoyed at the height of summer, when tomatoes and cucumbers are fresh from the garden.

Quick and easy week-night salad.

My mother made this for years, since I was a little kid. She just used apple cider vinegar and a little water to dilute the vinegar then poured it over the tomato wedges, onion and cukes. Anyway you want to make it, it's great.

What's not to like about it.

Oh MY Goodness!!!

I just love this easy to make recipe. It does taste better when served at room temp but sometimes I don't do that and it is still good. I sure wish we could get Vadalis all year but I take advantage of them when we can and substitute red onion when we can't. I also change out the vinegars to try new tastes and also use this type of dressing for other salads I make.

Delicious and easy!

This recipe is not only easy to make, but it's light and delicious. The perfect summer salad that can go with everything from chicken to fish. I followed the recipe exactly, and it brought rave reviews from family and friends at our picnic. Nothing was left in a large double bowl! I love recipes that make me look good; both in shape and in the kitchen!

Fresh and Tasty Summer Treat

I've made a similar salad to this for years using red wine vinegar and EVOO, but I occasionally change the vinegar to rice wine vinegar. If I don't have Vidalia onions, I soak the ones I have for at least an hour in ice water.

Quick and refreshing

This has been on my rotating list of side dishes for a few months now, and it's delicious every time I make it. I use cherry or grape tomatoes and cut them in half which makes them the perfect size for this salad. I usually use red onions because those are what I have on hand, and I reduce the amount of onion because it's a bit overpowering for me. Next time I'll try a vidalia and see if that makes the onion flavor more subtle.
This is an absolutely amazing salad though, and I would definitely recommend it. I usually use parsley for the herb, but have also made this without the herbs added.
