Tomato & Basil Finger Sandwiches

A smear of reduced-fat mayonnaise and a little fresh basil allow perfectly ripe tomatoes to shine.

Makes 4 servings

ACTIVE TIME: 10 minutes

TOTAL TIME: 10 minutes

EASE OF PREPARATION: Easy

4 slices whole-wheat bread
8 teaspoons reduced-fat mayonnaise, divided
4 thick slices tomato
4 teaspoons sliced fresh basil
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper

Cut bread into rounds slightly larger than your tomato—a biscuit cutter works well. Spread each slice with 2 teaspoons mayonnaise. Top with tomatoes, basil, salt and pepper.

NUTRITION INFORMATION: Per serving: 75 calories; 2 g fat (1 g sat, 0 g mono); 0 mg cholesterol; 12 g carbohydrate; 2 g protein; 2 g fiber; 345 mg sodium; 118 mg potassium.

Use UNREFINED sea salt, not table salt. Also, replace the whole-wheat with whole-grain bread.

I fell on this by accident, but I'm deffinately going to try it. It looks and sounds delicious, mmmmm!

Actually, why even add the salt!? Also, it should be "100% Whole Wheat" bread. "Whole Grain" does NOT equate to whole wheat flour. Read the ingredients list. "Whole Grain" breads are usually made with "enriched flour" with just some seeds added to the mix. Enriched flour is simply refined flour (wheat seeds that are processed to take off the nutrient rich outer layer and germ) with some processed vitamins/minerals added back into the flour. Enriched flour is also bleached. The vitamins, minerals, and protein are best from the natural source; thus, the reason to leave the whole seed alone and grind it all into flour. You could still have "100% Whole Wheat" bread with some "Whole Grains" in it-- you just have to search for it, or make it yourself. You should really read the ingredient list with more scrutiny to be assured you are buying the right thing. You could even try a douse of extra virgin olive oil, instead of the mayo. E.V.O.O. is much healthier than mayo, with plenty of mono-un-saturated fats. You could even infuse herbs into a bottle of the extra virgin olive oil to flavor it.
