This tangy tofu-based mayonnaise is vegan.
- 1 cup silken tofu
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon sugar
- Salt & freshly ground pepper to taste
- Place tofu, oil, lemon juice, mustard, sugar, and salt and pepper to taste in a food processor or blender and process until smooth.
Per tablespoon: 27 calories; 2 g fat (0 g sat, 1 g mono); 0 mg cholesterol; 1 g carbohydrates; 1 g protein; 0 g fiber; 28 mg sodium; 1 mg potassium.
