Tilapia & Summer Vegetable Packets

Wrapping vegetables and fish in a foil packet for grilling or baking is a foolproof way to get moist, tender results. Tilapia and summer vegetables pair with olives and capers for a Mediterranean flair.

READER'S COMMENT:
"We enjoyed this recipe. It was really flavorful. I left out the capers and olives. I also changed the vegetables a little and just used ones I had on hand. "

This is one of my favorite dishes! And that's saying something because I'm not a big fish fan. Even my 6 yr, 3 yr and 2 yr olds love it. I've made this several times now and each time it has been delicious. I serve this over brown rice with the juices from the packet and a salad. When I made this last night I didn't have summer squash or fresh green beans, so I used edamame and frozen green beans instead and I liked it even more than the original recipe.

We really loved this dish. I have no clue what the other reviewers are talking about when they say this was bland. The mixture of the olives, oregano, oil and lemon juice made for a very flavourful, moist and delicious meal. We used salmon instead of tilapia, and as another reviewer mentioned this does make it take a little longer to cook, for us it took about 17 minutes on the grill.

Will definitely make this again!

I thought this was very flavorful and so easy! I added asparagus to the mix.

I used salmon rather than Tilapia. Also marinated the fish in lemon juice for about 15 minutes prior to assembly. And, I used dried Italian seasoning rather than fresh oregano. Cooked for 30 minutes, probably because the salmon is thicker than Tilapia. It turned out excellent. Very easy and satisfying.

Not the most flavorful but easy and fast. Works if you are looking for a quick healthy dinner.
