A Mexican-style torta is just like a burrito, except the “wrapper” is a hollowed-out roll instead of a tortilla. Here it's filled with mashed spiced black beans and a quick guacamole. Take this vegetarian version to another level (and add calcium) by melting Monterey Jack cheese onto the bean side of the sandwich. Serve with: Grilled corn on the cob or Spanish rice.

i love this site everything i've cooked from here so far has been great! this though i used lettuce instead of cabbage and now i see how cabbage would have been better and i left out the jalapenos because of my son which i couldn't even get him to try this anyways and i know it won't fill my husband this would have been better for just a couple days of lunch for me or something since i'm the only one who enjoys healthy food in this house. i liked it but i was def missing the jalapenos. |
