Tijuana Torta

A Mexican-style torta is just like a burrito, except the “wrapper” is a hollowed-out roll instead of a tortilla. Here it's filled with mashed spiced black beans and a quick guacamole. Take this vegetarian version to another level (and add calcium) by melting Monterey Jack cheese onto the bean side of the sandwich. Serve with: Grilled corn on the cob or Spanish rice.

I really enjoyed these. I'm always looking for healthy veg dishes that are filling, and these are exactly that. Lots of flavor!

We have made this several times and love it each time. We've made it both with the melted cheese and without. I have to say I like it better with the cheese. It is our go to dish on a really hot summer night!

This was really good! I was afraid my family wouldn't like it, but they devoured it and asked to have it again some time. I didn't add the jalapenos because a few people don' t like them, but I will do it next time.
