Thai Chicken Satay with Spicy Peanut Sauce

Satay is Southeast Asian street food—strips of spiced meat, threaded on skewers and sold at carts all over the region. Although it’s served with all sorts of condiments, peanut sauce has become the Western favorite. And why not? It’s spicy, sweet, salty and the perfect match to the chicken strips.

Makes 4 servings

ACTIVE TIME: 30 minutes

TOTAL TIME: 35 minutes

EASE OF PREPARATION: Easy

3 tablespoons lime juice
3 tablespoons canola oil
2 teaspoons reduced-sodium soy sauce
2 teaspoons fish sauce (see Ingredient note)
1/2 teaspoon crushed red pepper
1 pound chicken tenders
Spicy Peanut Sauce (recipe follows)

1. To marinate chicken: Whisk lime juice, oil, soy sauce, fish sauce and crushed red pepper in a shallow baking dish until combined; add chicken and turn to coat. Let marinate in the refrigerator for 15 minutes.
2. Preheat grill to high.
3. To grill chicken and serve: Thread each chicken tender onto a wooden skewer (see Tip). Grill the chicken skewers until cooked through and no longer pink in the middle, about 3 minutes per side. Serve warm or chilled with Spicy Peanut Sauce for dipping.

TIP: To prevent wooden skewers from burning on the grill, wrap the exposed portion in foil before grilling. (Contrary to popular wisdom, soaking them in water doesn't prevent them from burning.)

Ingredient note: Fish sauce is a pungent Southeast Asian sauce made from salted, fermented fish. You can find it in the Asian section of large supermarkets and in Asian specialty markets.

MAKE AHEAD TIP: The peanut sauce will keep, covered, in the refrigerator for up to 2 days. | Equipment: 12 wooden skewers (see Tip)

This recipe was VERY tasty, and very easy and fast to make!!! I made it for my guy and I after I tried it myself, and he loved it too. I will most definitely be making this over and over!

This dish was very quick and easy to make, but basically, pretty boring. The chicken does not retain the flavors of the marinade, the peanut sauce is uninspired. Although it was filling enough (I served it with some brown rice), we won't be making this again.

Delicious! My husband cooks the 'basics', so to branch him out a little, I picked this recipe. He found it easy!! He even made the peanut sauce. Since some have not been able to keep the flavor after marinating, we added more of each ingredient- almost doubled them. We also marinated for 30 mins in the fridge and basted the chicken once or twice while it grilled. Worked perfectly and the flavor maintained. Great way to make a novice cook look like a genius chef!

I accidentally marinated the chicken for 30 minutes and BOY was that a mistake. That was probably why the meat came out WAY too lemony. I bet if I marinated it for less time it could have turned out better. The peanut sauce was an utter disappointment. It tasted nothing like the ones that I love so much from thai restaurants! I had to add some satay paste to even out the taste- the blend was just not right.
