Tandoori chicken is a traditional Northern Indian dish of spiced yogurt-marinated chicken cooked in a clay oven. In this tandoori chicken salad recipe we grill chicken and toss it in a salad with grilled tomatoes and cucumber.

Everyone had seconds

Made the dressing the night before and added the cucumbers and chickpeas.
Everyone loved it.

Great summer salad

I grilled the chicken a few days in advance, chopped it and froze it. The day before I made the dressing and added the cucumber and chickpeas. The day of I thawed the chicken and served it on the side so the vegetarians could eat the salad. Just before serving I mixed the lettuce. Everybody went back for seconds.

Lots of flavor and can do lots in advance
