For a satisfying last-minute supper, it's hard to beat a sweet potato zapped in the microwave. The fragrant filling of beans and tomatoes adds protein. Be sure to eat the skin, which is full of fiber, as well.

Loved this! Dinner was ready in no time. I would even add a little more coriander and cumin next time.

Loved this recipe and the look of it was superb - fasntastic orange colour of the kumera against the stunning black of the beans. I used dried black beans that had been soaked overnight then cooked until tender.

This is a delicious recipe that my entire family loves, including a 4 year old and 1 year old! The "salsa" on a sweet potato made me hesitant to try it, but I'm so glad I did. It's very filling and has now become a regular!

Delicious!! I accidentally forgot to add the cilantro and sour cream, and it still turned out delicious! I would definitely recommend this recipe.
