For a satisfying last-minute supper, it's hard to beat a sweet potato zapped in the microwave. The fragrant filling of beans and tomatoes adds protein. Be sure to eat the skin, which is full of fiber, as well.

This One's a Winner

This has become one of my favorite recipes. It's one of the quickest recipes I make. It's very good as is, but I often will add cooked chicken, jalapeños, chipotle powder, guacamole, and/or cheese. It also tastes wonderful with russet or red potatoes, if you aren't a fan of sweet potatoes or yams.

Great Flavors Combined

I was able to whip this up in 12 minutes. It's quick and delicious. I followed the recipe as it's written, and added a bit of frozen corn, chopped red onion and a dash of pepper. I'll definitely make this again!

Need a New Idea for This Dish

I would love a recommendation for alternative spices to use with this smart recipe. My family does not like cumin, so can someone recommend a different set of flavors that would work well with the sweet potato and beans?

I make this by just mixing chunky salsa with the black beans. Find a salsa your family likes and try it! We like the Chipotle Salsa by Archer Farms (Target's house "gourmet" brand).

A very filling and nutritional meal. Followed the recipe to the letter - at first I thought the corriander & cumin amounts may be too much, but it was perfect. I topped with plain yogurt instead of the sour cream (another recent favourite). Thank you to the creator of this winning combination ♥

I thought it was okay. Maybe my expectations were high because of all the great reviews I read, but I wasn't that excited. I thought it needed a little too much sour cream to combat the dryness of the beans and potato. It wasn't bad, and I finished the whole potato, but I won't make it again. My husband liked it better than I did.
