Good recipe. It only took a few minutes to make and it was really good and filling. I made one for my boyfriend too and he loved it.
This was by far the best recipe I have tasted yet from EatingWell, and I've tried many delicious ones. As everyone else mentioned, the combination of flavors was excellent, and this dish, together with a green salad, made for a light yet filling dinner.
The only things I changed were to substitute yogurt for sour cream, which worked just as well, and instead of microwaving or baking the potatoes, I started them in the microwave for about 9 minutes, then finished them off by baking, giving it a better crust.
Ive never even tried a sweet potato, but when I saw the picture if this recipe I just had to try it. It was very easy to make and the balance of flavors was perfect. Would be a great recipe for someone who wants a delicious meal, but doesn't have a lot of time!! I will definitely make this again VERY soon. ( My brother is a very finicky eater and he LOVED it. Cleaned his plate, and finished mine!!! )
