For a satisfying last-minute supper, it's hard to beat a sweet potato zapped in the microwave. The fragrant filling of beans and tomatoes adds protein. Be sure to eat the skin, which is full of fiber, as well.

Nice quick meal

This was so easy to make and very filling! Even my fiance who doesn't like sweet potatoes enjoyed this.

It was tasty but definitely needed the sour cream for extra flavor. I used canned diced tomatoes instead of fresh and extra cumin instead of coriander and it still tasted fine. I definitely recommend this for a quick, easy meal.

Fantastic!

Because I had it on hand already and it's made primarily from Coriander and Cumin, I used two teaspoons of Garam Masala instead. It was delicious. It has Cinnamon in it which worked really well with the sweet potatoes. Since I had plenty of time, I baked my potatoes in the oven and heated my black bean salad on the stove. The whole family loved it, including our six year old. I'll definitely make this again and again.

This turned out awesome.

I was truly suprised by how good this dish turned out to be. While I love all of the ingredients, I couldn't imagine them together. I followed the recipe exactly and the flavors were wonderful. This is a keeper.
