Oven Sweet Potato Fries

Making oven fries out of sweet potatoes brings out their inherent sweetness.
Makes 2 servings
ACTIVE TIME: 5 minutes
TOTAL TIME: 25 minutes
EASE OF PREPARATION: Easy
1 large sweet potato, peeled and cut into wedges
2 teaspoons canola oil
1/4 teaspoon salt
Pinch of cayenne pepper
Preheat oven to 450°F. Toss sweet potato wedges with oil, salt and pepper. Spread the wedges out on a rimmed baking sheet. Bake until browned and tender, turning once, about 20 minutes total.

I jazzed my fries up by adding cinnamon and allspice. My husband usually only eat candied sweet potatoes, but he really liked these. Thanks!

I make a slight variation of this. I use olive oil, cumin and paparika. It is easy, tastes great and is healthy! What else can you want.

I added dried thyme along with the cayenne that gave these some nice extra flavor. Also, after they finished baking, I placed them under the broiler to crisph them up. Delicious
