This was pretty good. I served it with cheddar cheese and salsa on tortillas. It took a little longer than the recipe said to get the sweet potatoes cooked all the way and I thought it got a bit dry by the time they were done. With some tweaks, I would definitely make this again.

I made this the other night with a side of garlicy broccoli rabe. I used fresh corn as it's in season, and that made it especially good. The next day (this recipe makes a lot) I put some leftovers in a wrap with tomato and avocado and my husband raved. For myself, though, I combined the rabe and the leftover 'hash' and some avocado, and realized that the combination was fantastic. Next time I will add rabe or kale and more garlic to the dish to add a bit of sharpness and top with avocado.
This was a very good recipe and I will be making this again. I'm not a fan of sweet potatoes, so I substituted regular potatoes for sweet potatoes and I was very happy with the results. I did use 4 tsp of cumin and, for my taste, it was fine.
