Chicken thighs can take plenty of cooking without getting tough or drying out, which makes them perfect for the slow cooker. Here we braise them in Guinness stout along with hearty vegetables, with just the right amount of bacon for added savoriness.

Delicious on these cooler evenings

We loved this recipe! I used a whole package of mushrooms (1 pound), added three smallish potatoes, and 3 stalks of celery (sliced thin). I used a kind of salt pork something like pancetta (but better) instead of bacon. The only other change I made was to add a couple of splashes of Worcestershire sauce as recommended by some reviewers. My gravy was a little thin, probably because of the extra mushrooms, but the taste was exceptional. We will certainly have this again - it renewed my faith in chicken cooked in the slow cooker.

Except for the stout, ordinary ingredients

I made this stew with chiken broth instead of beer since i had all the ingredients except the stout. It was totally awesome. My family couldn't get enough. Next time I will use the stout.

Excellent

I would definitely make this again. I followed the recipe except added extra bacon. My family loves bacon. I prepared it the day before, put in the fridge and the following morning all I had to do was turn it on.
