Spiced Apple Cider Muffins

Winter 2004, The Essential EatingWell Cookbook (2004)

Your rating: None Average: 4 (85 votes)

Cider doughnuts, a New England harvest treat, inspired these spice-happy muffins. A crumbly streusel topping made with a small amount of butter provides a delicious finish.

I make these every winter and I absolutely love them. I bring them into work and they are gone before I have been there an hour! :)

I just made these last night and they came out kinda dry and not a huge apple flavor. Wonder if I did something wrong. I may have over mixed.

I make these all of the time- everyone loves them. I substitute the following: whole wheat pastry flour for the white flour and applesauce for the apple butter. Delish!

I made these with unsweetened applesauce too and they still turned out quite well! (Just remember to not mix too much!)

These are FABULOUS muffins! They're easy to make and easy to freeze for later. Everyone raves about them!
