Fresh orange zest and juice enliven simply sauteed snow peas.


Snow Peas with Orange Recipe

Ingredients

  • 1 teaspoon canola oil
  • 1 teaspoon finely chopped garlic
  • Freshly grated zest of 1 orange
  • 8 ounces snow peas, stems and strings removed (3 cups)
  • 2 tablespoons orange juice
  • Salt & freshly ground pepper, to taste

Preparation

  1. Heat oil in a medium skillet over medium heat. Add garlic and orange zest, and cook, stirring, until golden, about 30 seconds. Add snow peas and orange juice. Cover and cook until the peas are tender, 2 to 3 minutes. Uncover the pan and cook until the juices thicken slightly, about 1 minute. Season with salt and pepper.
