This was a fantastic dish. I used smoked gouda cheese and hot Italian turkey sausage... The stuffing was delicious. My peppers could've had a little more cooking in the microwave... but in other comments they said not to do microwave and bake in oven at 350 for an hour.. may try that next time.. Loved the peppers though... delicious and very filling

Turkey sausage and smoked cheese give a flavorful boost to this versatile, somewhat retro dinner. We've speeded it up by microwave-blanching the peppers and using instant brown rice. If possible, choose peppers that will stand upright.

I decided not to microwave peppers...just sliced off tops, scooped out seeds and put in 9 x 13 pan raw. You gotta saute the sausage to make sure it's done. Added 28 oz. can of whole peeled tomatoes, simmered 10 mins. I cooked Rice Select 'Royal Blend' which is a mix of white, brown, wild & red rice and set aside to cool. Folded that into meat mixture along with 1 chopped yellow squash & 1 green zucchini and then the fresh chopped basil. Scoop, stuff & pack into 6 peppers (red, yellow & orange). Add 1/ 4 cup water to pan, cover with foil & cook 350 for about an hour. Uncover, top with smoked gouda cheese and bake additional 10-15 mins. Absolutely FANTASTIC!!
The turkey sausage gives this dish incredible flavor. Microwaving the peppers not only cuts down on prep time but also leaves them slightly al dente. Followed the recipe exactly, using smoked gruyere to top the peppers. The recipe was a big hit with the fam.
This is now a family favorite! I love the turkey sausage. It really brings it all together. This is a delight. The peppers cook so well in the microwave and then putting them in the oven just gives them a browned finish! Great Recipe!!!!
