I get tired of salads super quick so I'm always looking for a new combination to change things up. So happy I decided on this one!! It was incredibly easy to put together and the taste is amazing with the bit of smokiness of the paprika, the saltiness of the pork and the twang of the dressing. I used arugula instead of frisee only because of availability.
Smoky Ham & Corn Salad

Fresh corn, diced deli ham and crunchy croutons are tossed with a smoky, creamy dressing in this light summer salad. Serve with a crisp glass of rosé and sliced melon.

I thought this was great for how quick it came together. I made it after a long workout and it 'quieted the tiger' quickly. I added some cayenne, chili powder and garlic powder to the dressing. Will play around with it more because it's definitely a keeper to pull out when you need something healthy quick.
We had record heat and the last thing I wanted was to turn on the stove/oven. This salad came to the rescue! I moved it up the menu and bam! Fairly fast, way easy and very yummy! Grab a least two ears of corn if the kernels are small or the ears smallish. However neither the dressing nor the greens lasted the next day, I had it for lunch but it had lost it's luster. But make this one. It's very light for a creamy dressed salad and make for a satisfying meal.
This was a really nice salad, a pleasant change of pace for lunch or a light meal. I used mixed salad greens. The dressing was the right amount - not too much or too little. I took this for lunch for 3 days, had triscuit thin crisps (regular flavor) with it. By the third day the dressing & greens weren't looking so good, but it tasted wonderful. Next time I'll mix in the greens separately each day. Excellent recipe.
