So good!

I needed somthing I could make for myself that was quick, easy, and healthy so I swapped out the pizza crust for a whole wheat tortilla and threw it in the oven for about 10 minutes on 400 degrees. It was perfect and really tasty. The only thing I would do differently next time is add some green on top in the form of fresh parsley or green onions.

After reading the other reviews I decided to make half with salsa and half bbq sauce. I put the same veggie mixture on both sides, pretty much what the recipe called for along with green onion. Then I combined mozzerella and smoked gouda and sprinkled fresh cilantro on top. I also sprinkled parmesan after it was baked.
I'm sure Iincreased the calories but W.O.W. it was so good!


Even my "must-have-meat-in-every-meal" boyfriend loved this, whole wheat crust and all! Will definitely be making this again.

Will Make Again

I made using whole wheat pita rounds (personal pizza style) to make it a quick, simple dish. Will make again using less barbeque sauce (and not Hawaiian style) and maybe adding some seasoning to the bean mix, such as cumin (as suggested by another reviewer). Also added some gouda as suggested, and may also use more cheese the next time as I used very little. Maybe it will then get a "great" rating from me.

"Best pizza so far!"

I introduced my guy to home made pizza when we started dating, using eatingwell's whole wheat pizza dough recipe. Now the only pizzas he likes are the ones we make. I made this last night and he said "This is the best pizza you've ever made!" :)

I used an oven at 500F and pizza stone, baking the crust for 4 minutes and flipping it, baking it for an additional minute before putting the toppings on (I only used 1/2 lb of the pizza dough to make a thin crust). I sprinkled dried cilantro on the bbq sauce, spread on the toppings (1 chopped tomato, 1/2c each corn and black beans), then sprinkled the cheese on top (I used about 1/3c mix of shredded mozzarella and smoked Gouda per pie because neither of us like a lot of cheese). I baked it for about 8 minutes then put the pizza directly on the oven rack for 2 minutes to get the bottom more crisp. It was amazing! I'm getting hungry again from thinking about it!

I forgot to mention that I used frozen corn kernals that I allowed to thaw for a few minutes and they worked just fine
