Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

I think there was a mistake in this recipe. I followed the directions, but the gnocchi was not cooked enough. At the end, I had to cook it much longer than the instructions and it still was quite al dente. Was the gnocchi suppose to be cooked before starting the recipe? We liked the flavor, but it just wasn't quite right.

The recipe was ok, it definitely needed basil. Tasted a bit flavorless w/ out it.

Put this together very quickly and effortlessly. Wasn't sure how much flavor there would be ~ I was not disappointed. Used regular diced tomatoes and added a few shakes of basil and oregano. Also used baby spinach because that's what I had on hand. Will definitely make again!

I thought this recipe was great. My husband prefers meat so I added chicken sausage to the dish and it turned out fabulously.

I took a few liberties with the recipe- added seasoned chicken strips, a red pepper and only 1/4 of the canned tomato. None of the beans. It was delicious still- amazingly delicious!! You can see it here- http://cooknkate.wordpress.com/
