My grocery store may or may not carry Gnocchi...unfortunatly the employees didn't know what it was and were not much help. So, I tried making with Hominy and White Beans and it was great! I also threw in some sliced Turkey Sausage and it was a very filling meal, even my picky eight year old enjoyed. Really easy to make and clean up, and good leftovers for quick healthy lunches. I will make this again, hopefully with find Gnocchi next time.

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

This recipe sped to our top ten favorite meatless meals when it first hit our lips! I seasoned the gnocchi with salt and pepper as it was browning- and added garlic powder at the last minute before pulling it off the stove.
On the second make- I waited to add the gnocchi during the plating process because we loved the crispiness rather than soaking during cooking. Like many others, I used chopped frozen spinach instead of chard with yummy results.
I garnished it with thinly sliced green onions and set out red pepper flakes to spice it up.
Finally, I recommend you make a pan of quick Jiffy corn bread for a complete southern spread!
I was surprised that the recipe calls for using extra virgin olive oil as I think it's much healthier to sauté using regular olive oil. I used fire roasted diced tomatoes, it added some spiciness that other reviewers mentioned it needed. It was a very tasty, very easy to cook dish. Great recipe.
I made this using spinach instead of chard and it was fantastic. We will definitely be making this again soon. Highly recommend trying it!
I absolutely love this dish and so do all the picky eaters I have made it for! I have been asked for the recipe over and over. Here are a few things I do to it to make it healthier and taste bit better. I use all organic ingredients including and most importantly the canned goods. I also add about a half a jar of Trader Joes tomato basil sauce to the dish. I include fresh Italian herbs – oregano, basil, parsley and of course add more garlic and YUMMMMM! I don’t have kids so I can’t say if this is kid yummy, but it is definitely adult yum.
