In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

This is a really great and easy recipe! I read the reviews and also added the crushed red pepper, which added more flavor, that I think it definitely needs. I also used spinach instead of chard.
My serving size is a cup or so. And I think that is plenty for one serving, paired with a salad. The reviewers who say it is only 2-3 serving must like a very large portion!
Make this today! It's a perfect weeknight meal, takes little time and tastes amazing! Hard to believe it is low calorie!

I made this for the first time for myself and my vegetarian daughter who is a very picky eater. We used baby spinach because we stayed in our comfort zone and found it quite enjoyable and hearty. Husband and mother-in-law polished off what should have been my daughter's leftovers. We figure if you add a little cooked italian sausage it would make the nonvegetarians equally happy!!





I saw this recipe and immediately wanted to try it. Even the roomie loved it and he is so hard to please! I have made it two times already and just bought more gnocchi to make another batch very soon!!
