Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

This was easy and delicious! We could not find shelf-stable gnocchi, and used frozen instead. The gnocchi stuck to the pan when trying to saute. Will try again with shelf-stable form. Taste was wonderful.

We all enjoy gnocchi but I wasn't sure how the rest would feel about chard as there are only a few vegetables they like......no need to worry as they really enjoyed the dish and commented that the "green stuff" was pretty good. Will make often.

I found this recipe in my email box on the same day I came home with a huge bunch of kale from the farmer's market - so I used that. Delicious! For faster preparation, I will use already washed baby spinach, but the dish was delicious with kale.

I've made this with both spinach andchard..and each is equally delicious. My kids even likedthis..which surprised me!
