Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

Extremely Edible

Wow, I loved this! I added extra Italian seasoning, garlic, and mozzarella and it was to die for! I went for the mildest chard - green chard - and was very satisfied. It wasn't bitter at all, it actually tasted somewhat sweet.
I was even able to accommodate my gluten intolerant brother by boiling roughly cut potatoes for him to have instead of the gnocchi.
Very delicious!

Just finished making and eating this for dinner. Was delicious, just what I was hoping for. Followed the recipe as is except didn't add the water. I cannot wait to have more tomorrow!!! Lots of leftovers.

This just did not turn out as I expected. Apparently, 7 minutes was too long to cook the gnocchi, so mine were extremely mushy. There was far too much liquid, so the whole thing was soupy. And, because I used swiss chard, the whole dish had an appalling pink color that made it look like vomit. The taste wasn't bad, but between the looks and the texture, most of it went into the trash. And I did make the recipe exactly as listed.

The lone vote of "bleah"

I was disappointed, since the ingredients sounded great; but this was a mushy mess. I used Trader Joe's whole-wheat gnocchi and wondered if using traditional would have made a difference, but this was nearly inedible. I ended up composting most of it.

Every time I use Trader Joe's gnocchi (ESPECIALLY the frozen kind) it turns into a mushy mess for me.

Use your Senses

Great recipe to incorporate loads of vitamin A and potassium into your diet, while still tasting good. I do however have a few suggestions. First, use Vegetable Broth instead of water. This makes this recipe at least twice as good compared to plain water. Choose to lowered sodium variety to stay within the healthy realm. Second, use your senses to decide when the Kale has been wilted down enough. From my experience the cook times were at least twice as long to get the right texture and consistency needed in a proper vegetarian dish. Third, try the Whole Wheat with Sweet Potato gnocchi for an added degree of complexity coupled with extra health benefits. So would I cook this again? You betcha!
