Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

I recently made this recipe using the whole wheat sweet potato gnocchi and it was fabulous! It is consummate comfort food you can eat without guilt. My husband raved about it and never missed the meat!

This was so easy and delicious! I have only recently begun to change my cooking habits, so this is a good crossover dish. I also add in artichoke hearts either in addition to the white beans, or without. I made it with monterey jack cheese and used the spinach gnocchi, delicious! I've made it several times now and always get great results.

This was great! I added sweet Italian turkey sausage, which I cooked first and added when I added the cooked gnocchi, but otherwise I followed the recipe exactly (okay, maybe I added a little extra cheese). We all really enjoyed it and will definitely be adding it to the rotation - it was also pretty simple to make and the first time I cooked with kale!

Made this recipe the first time per the instructions and wasn't happy with the doneness/texture of the sauteed gnocchi. Made it a second time and pre-boiled the gnocchi and it turned out GREAT! My family loved the flavor of the chard and my husband did not even notice that it was a meatless meal! Nice big servings too!

My new favorite recipe! Used with spinach instead of chard. One time I substituted garbanzos for cannellini beans and it wasn't right--definitely prefer cannellini. So easy and healthy!
