Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

WE BOTH LOVED IT! Great recipe, easy and very filling. This is now in my cookbook. I used canned swiss chard from last summres garden and it worked out great.

Served this with red peppers stuffed with ground turkey. It was a fabulous meal! I boiled the gnocchi as several others did.

This was a great meal. I was skeptical about how cooked the gnocchi would be just from skillet-frying it (I like my gnocchi a bit tender), so I boiled it first. The moist gnocchi stuck to the pan when I sauteed it, but it tasted great in the dish. I used a can of Hunt's fire-roasted tomatoes and added 1 tsp. of Italian seasoning. I was very surprised at how much flavor was in the dish given how little seasonings and spices were called for. I might try just skillet-frying the gnocchi next time, just to see how it is. Great recipe!

A VERY good vegetarian dish. Just needed some salt & pepper at the table. I will DEFINITELY be fixing this one again.... can't think of a thing I'd change!

This was great, fast and easy. I didn't have diced tomato w/Italian seasoning so I just added the seasoning to the pot with plain canned diced tomatoes. I love chard, so I doubled it and I couldn't find the sheld stable gnocchi so I used the refrigerated kind. I let it cook in the sauce for an extra few minutes before adding the cheese cause it seemed a bit liquidy at first. But I love it! My husband loves it too and he usually doesn't care for gnocchi.
