Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

The recipe was ok, it definitely needed basil. Tasted a bit flavorless w/ out it.

Put this together very quickly and effortlessly. Wasn't sure how much flavor there would be ~ I was not disappointed. Used regular diced tomatoes and added a few shakes of basil and oregano. Also used baby spinach because that's what I had on hand. Will definitely make again!

I thought this recipe was great. My husband prefers meat so I added chicken sausage to the dish and it turned out fabulously.

I took a few liberties with the recipe- added seasoned chicken strips, a red pepper and only 1/4 of the canned tomato. None of the beans. It was delicious still- amazingly delicious!! You can see it here- http://cooknkate.wordpress.com/
