This is a great dish. Very easy. I made it even healthier by using whole wheat/potato gnocchi and using less cheese (I used the 2% Italian blend) and just putting a small amount on each portion.. I also substituted a whole 5 oz. package of fresh baby spinach, b/c I had it on hand. Great pantry recipe to keep on hand. My sweetie loved it and loved that it was filling.

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

Definitely will become a staple. I was unable to find gnocchi (frozen or shelf stable) at the grocery store nearest to me, so I used tortellini instead (boiled and added at the end). So simple to make and yet we almost didn't have leftovers because it was so delicious (there are only two of us)!
Look forward to trying again with gnocchi!

I make something like this using pierogies. So, I think I will boil the gnocchi for a minute or two and then brown it in the skillet the way I do pierogies. I don't have chard either but I do have spinach, and I only have butterbeans, but it is the white ones, so....now that I think about it, I'm probably making a completely different dish but the idea is what I love. Beans, greens and Gnocchi. Thanks.
I added asparagus, omitted the mozzarella cheese and added a little extra Parmesan, it was delicious. I've made it the normal way too, but I really liked it with asparagus this time!
