Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

I love, love this recipe... I've made it many times! I use a can of fire roasted tomatoes and whole wheat with sweet potato gnocchi
Like others, I thought this was a great dish. However, I don't agree that it makes great leftovers. When left overnight, the Gnocci absorbed most all of the sauce and were very mushy. Next time I am going to substite a pasta that will hold up better for the next day. Will definately be making again.
Made plenty for two people and great for leftovers. It is a wonderful recipe to keep on hand for when you don't have much time to cook dinner. Also as most of the ingredients are shelf-friendly it is great to have on hand when you don't have time to run to the store.
This is one of our favorite dinners! All of my kids love it and my 3 year old begs for the gnocchi right out of the pan. I've tried spinach and chard. Both worked well. I've tried plain gnocchi and the whole wheat gnocchi made with sweet potato and I think I slightly prefer the whole wheat over the plain. The last time I made this, I used fire roasted tomatoes with garlic--loved it! Next time I make it, I think I will try an italian cheese blend instead of mozzarella for a little different flavor. You could also add a cup of shredded rotisserie chicken to stretch this meal and use up some leftovers.
