Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

My husband really liked this. Surprisingly, my kids (10, 7 & 7) did too (though some of the kids took a little longer to buy in). It was fairly quick to make. That most of the ingredients are from the shelf is great from a last minute dinner perspective.
I cooked this because I thought it sounded great, expecting gracious, but negative comments from my family. However my high school kids loved it! (Understand, they don't eat anything that is green.) I thought it was great also, but was shocked that they did & asked for seconds. Since originally cooking it, I lost the recipe, so glad to find it again!
I don't know why this has a low rating! It's so yummie! Cooking the gnocchi in the skillet gives it a light crunch, which is a great contrast to the other softer ingredients. I really enjoyed the mixture of texture and tastes in every bite. This is a new addition to our regular meal rotation! It's easy, it tastes good, and has options to add variations (adding other fresh veggies!)
Changes... I added two tablespoons of water when I first put the gnocchi in the skillet. The shelf gnocchi seemed too dry so the water helped them plump up. Stirred them and then let them sit in the skillet in a single layer to brown.
I would 1/2 the beans myself. I'm not a huge fan of too many white beans.
I used an entire bunch of chard.
I did make more veg than gnocchi so the extra went into the fridge for lunch today. I threw in a handful or two of spinach for added greens. Today atested better - all the flavors blended really well. Next time I will make them the night before.
I'm not sure why this has a low rating... this dish is great! Each bite has different texture and flavor, which keeps it interesting as you eat. It's quick and easy to prepare and well balanced. This is a must have in our meal rotation!
