In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

"Skillet Gnocchi is now one of my favorite go-to meals. Easy and delicious. I do usually use spinach, as opposed to chard (my husband dislikes it). It's great either way. "

Quick and healthy easy meal!

I don't know why this has a low rating! It's so yummie! Cooking the gnocchi in the skillet gives it a light crunch, which is a great contrast to the other softer ingredients. I really enjoyed the mixture of texture and tastes in every bite. This is a new addition to our regular meal rotation! It's easy, it tastes good, and has options to add variations (adding other fresh veggies!)

Changes... I added two tablespoons of water when I first put the gnocchi in the skillet. The shelf gnocchi seemed too dry so the water helped them plump up. Stirred them and then let them sit in the skillet in a single layer to brown.

I would 1/2 the beans myself. I'm not a huge fan of too many white beans.

I used an entire bunch of chard.

I did make more veg than gnocchi so the extra went into the fridge for lunch today. I threw in a handful or two of spinach for added greens. Today atested better - all the flavors blended really well. Next time I will make them the night before.

Quick and healthy easy meal!

I'm not sure why this has a low rating... this dish is great! Each bite has different texture and flavor, which keeps it interesting as you eat. It's quick and easy to prepare and well balanced. This is a must have in our meal rotation!

This was awesome! Just what I was looking for.

I really enjoyed this recipe. It's easy to make, looks beautiful with all of the colors from the chard, tomato, beans, etc., and turned out very well. I'll definitely be making it again. I used shelf-stable whole wheat with sweet potato gnocchi. It was a little watery at first, but after it sat a bit was not watery really at all. I'm not sure why so many people gave this bad reviews.

Relatively fast, delicious, healthy, easy

The only complaint I had was

The only complaint I had was that it was a little bland, so I added a little bit of salt, garlic, more pepper, oregano, and basil. Then it was great.

Family Favorite

I just noticed the low rating on this recipe - we've been making this for a while now and it's a favorite of everyone's - kids included. I make it with spinach. Delicious, healthy, great!

Delicious - Why the low ratings?

One of my favourite Eating Well recipes ever! I get bored when every bite tastes the same and the balance of ingredients in this dish is perfect - every bite tastes a little different than the one before. Don't skimp on the onion, garlic or spices or overdo it on e liquid. The recipe is great - my new go-to meal for when the cupboard is "bare".

Very easy, relatively quick, many staples
