We enjoyed this recipe during the holidays, while visiting family in Oregon. My daughter substituted spinach and some crushed red pepper. It was a hit all around. Thanks.
Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

Yum! My husband and I had this for dinner on New Year's Eve and were not disspointed!
This is a great dish that can be easily customized for different eating-styles. For my man, I made the meal pretty much by the recipe (I had kale and fresh tomatoes and prefer whole-wheat/potato gnocchi, so I used those) and added a couple ounces of Italian sausage (we had it left over from another meal). For me, I nixed the cheese (I'm allergic to milk) and threw in some artichoke hearts (he hates 'em, I love 'em!). De-freakin'-licious! A smattering of roughly chopped fresh herbs tossed over it at the end (parsley, thyme and chervil) made it really special. Yum!
My husband and I really enjoyed this meal as did one of my kids! My husband actually suggested making as a starter to christmas dinner. I agree frying the perogies makes a mess they just stick to the pan. I used spinach in place of chard and placed it in a casserole dish and bakes it for the cheese to melt!
