In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

I found this recipe when looking for something different to serve our vegetarian son-in-law. It was so quick to make & only required one pan, so clean-up was a breeze. I did use spinach instead of chard. I also used diced tomatoes in sauce & added my own fresh Italian herbs which gave it additional flavor & body. The whole family enjoyed it.





I LOVE this recipe. I stumbled upon it randomly through Google after searching "healthy recipes". I wanted to make it again and couldn't find it too easily. I was heartbroken. But luckily I stumbled back on it again, and bookmarked it this time. It's very yummy and you won't feel like crud after eating this filling meal, either. :D

This is an excellent meal with a few modifications. I use spinach instead of kale, garbanzo beans, and add some bacon bits. It's quick, and relatively healthy!
