Skillet Gnocchi with Chard & White Beans

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella. Serve with a mixed green salad with vinaigrette.

This is a great recipe. It is very flavorful and easy to make. My husband likes it, but he misses meat in a no-meat dish. I can quickly thaw frozen shrimp or use leftover cooked chicken and everyone is happy. It turns boring chicken into just the opposite!
This recipe is easy to vary - you can use different types of greens, beans, and or cheese depending on what you like. Don't leave out the tomatoes. They add lots of flavor. I'm making this again this week.
