Cooked peeled shrimp is perfect for quick and healthy meals--here we use it in place of chicken in our simplified Cobb Salad.

I have a question.....i am not a fan of blue cheese. What would be a good subsitute cheese?

How about feta? Trader Joe's has a fat free crumbled version that I love to put on salads (also nice on salads with pear and walnuts or pecans.) It's not a Cobb salad any more but once you substitute the chicken for shrimp why not selecting another cheese? Thin strips of Swiss cheese will probably work too.
