I was amazed by how delicious this was. I made it as per the recipe and added some cubes of extra firm tofu that I fried until golden and soaked in soy sauce before mixing everything together. Also, I used rehydrated shiitakes and threw some chopped green onions on top.

Bok choy's mellow flavor goes beautifully with earthy shiitake mushrooms in this quick stir-fry. Be sure to use toasted rather than plain sesame oil—it has a superior nutty flavor. For a little heat, add a pinch of crushed red pepper.

I made this with portabello mushrooms and used fish sauce (didn't have any oyster sauce handy). Had it with grilled salmon and rice noodles and it was perfect meal for me. First time making bok choy.
This is a simple to make, delicious way to eat your veggies. It has a great Asian flair and goes well with just about everything (especially a nicely grilled NY Strip!).
