Toasted sesame seeds add taste and eye appeal to a cheery plate of carrots.

Makes 3 servings, about 2/3 cup each

ACTIVE TIME: 5 minutes

TOTAL TIME: 5 minutes

EASE OF PREPARATION: Easy

2 cups baby carrots
1 tablespoon toasted sesame seeds
Pinch of dried thyme
Pinch of kosher salt

Toss carrots with sesame seeds, thyme and kosher salt in a small bowl.

NUTRITION INFORMATION: Per serving: 33 calories; 0 g fat (0 g sat, 0 g mono); 0 mg cholesterol; 8 g carbohydrate; 1 g protein; 2 g fiber; 72 mg sodium; 220 mg potassium.
Nutrition bonus: Vitamin A (250% daily value), Vitamin C (15% dv).

Such a simple idea-I can't believe how much tastier these are than plain baby carrots.

Sorry to say neither carrots nor beets are the best thing for diabetics. You may want to reconsider including this recipe in your diabetics' recipes.

I added a smidge of light raspberry vin. and used a salt grinder and it was great. Loved the taste of the sesame seeds.

This is a wonderful twist on a normally plain snack! And I do feel the need to correct a previous review - carrots are fine for diabetics. I should know - I have type one diabetes and I eat them all the time!
