Seasoned Couscous with Lemon & Mint Recipe

Ingredients

  • 2 cups water
  • 1 1/3 cups couscous
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 teaspoon salt, preferably kosher
  • 1 teaspoon Moroccan Spice Mix, (recipe follows)
  • 1 1/2 teaspoons freshly grated lemon zest

This recipe calls for:

Preparation

  1. Bring water to a boil in a saucepan; stir in remaining ingredients and remove pan from the heat. Cover and let sit for 5 minutes. Transfer to a serving dish, fluffing the couscous with a fork.
