Haven't made the dish yet, just some info for the prior commenter, 2002bandit1200:
You need a shrimp peeler/deveiner.....small plastic gadget that peels.deveins in one swipe...cost about $1 at seafood markets.

I made it for the first time. It was a lot of work removing the vain from the shrimp, but well worth the work. This was the first time I ever pouched!!! The meal was excellent and everyone in the family loved it.
