I made this without the couscous and it was plenty filling although I used somewhat more seafood than was called for. I'm a big fan of fennel so I loved this but my husband would have preferred less of it.

I made for about 10 or more servings and loaded up with squid, scallops and shrimp.
My family loved it.
I am dieting and it is hard to believe this is under 500 calories per serving - so it is a great treat to eat something so filling. My wife liked the dish as well and insists that I make it again soon. I certainly will.
I really loved this dish. Not a fan of scallops so I used shrimp and chicken sausage. I also didn't have any fennel but it didn't matter. The saffron was so flavorful and it gave the couscous such a wonderful aroma. This one is definitely a keeper!
