The basic recipe is good. I just "tweaked" it a little for my family. I made the muffins a little spicier aby dding abour 1/2 teaspoon of chili powder and about 1 teaspoon of hot sauce. I also used 4 pieces of crumbled bacon rather than canadian bacon. I've also used both red and green peppers and substituted red onion or vidalia onion for the scallions.

Found this recipe in a newspaper, and I'm hooked! So much better than a "sweet" breakfast.

we used cooked bacon instead of canadian, and substituted diced green chilis for the pepper. then, we paired these with the mini quiches. we opened the muffins and put the quiches in the middle. great stuff.

Well, the muffin was disappointing. I like the texture, the whole wheat flour was definitely a plus on that. It did seem bland - in fact, my husband hated them. I didn't think they were too bad. Probably won't make again.

Well, if you leave out the bacon, there will be less flavor! If omitting an ingredient, try adding another. Mushrooms might work well here. These were a hit (as is) at the gathering we brought them to.

I suspect they seem bland to some because of the low salt content.

These were disappointing. After reading the reviews I used small chunks of extra sharp cheddar instead of grated--good change. I also intended to add some jalapenos and forgot. They would have added something, for sure, but not enough. They are very filling, which is great, but they're just "blah."

These were Ok I left the bacon out, added a little more cheese I also added some more veggies like shredded carrots & mushrooms and a little more seasoning. It turned out great and they were quite filling.
