September/October 2010

Thai flavors of coconut and basil come together in this fresh and spicy chicken and cabbage stir-fry. If your family prefers a milder meal, forgo the jalapeño. Serve with: Rice noodles and mango slices.

READER'S COMMENT:
"Our family really loved this, and I have made it twice more since then! I agree that it's not really a stir fry OR a curry, but that's just semantics. It's a great dish, regardless of what you call it. Fabulous flavor and it comes...

We really enjoyed this one. My husband doesn't like really hot so instead of a jalepeno I added dried ground peppers (Hungarian Hot Wax) in an amount I know he'll tolerate. I can always add more for myself when serving! We'll surely do this one again.

I made this the other night and loved it! I did not have jalapeno, so I added cayenne with the coconut milk, and also a little 5-spice powder. I also added a little veggie broth to the mushrooms when they started to stick to the pan. I thought the dish was delicious. Lots of fresh basil at the end really makes it. Oh, and a little crumbled cashew on top when you serve it doesn't hurt either...

I made the recipe according to the directions it looked great. But it was missing some flavor. I was really surprised at how bland it came out with the jalepeno and fish sauce added. Would not make it again.

This meal was super easy (and cheap) to make! I substituted canned broken stem mushrooms and left out the chicken and fish sauce and it made a fantastic vegetarian meal! Leftovers tasted great too!

Made this last night and absolutely LOVED it. What a great combo of flavors and textures - the soft cabbage and mushrooms w/ the saucy chicken. Fabulous! :)
