Serve this saffron-infused mayonnaise with steamed asparagus or mussels or grilled seafood kebabs.
- 1/4 teaspoon saffron threads
- 1 teaspoon warm white wine
- 1/2 cup reduced-fat mayonnaise
- Pinch of cayenne pepper
- Crumble saffron threads into wine; let steep a few minutes before adding to mayonnaise. Season with cayenne.
Per tablespoon: 26 calories; 2 g fat (1 g sat, 0 g mono); 0 mg cholesterol; 2 g carbohydrates; 0 g protein; 0 g fiber; 130 mg sodium; 1 mg potassium.
