Radishes become sweet and tender when roasted in a hot oven in this easy radish recipe. If the roasting doesn’t mellow the bite of the radish enough, stir in a sprinkle of sugar or honey along with the butter and thyme.

Turns out I don't like roasted radishes

Soooo easy and surprisingly pleasant - with one addition.

When trying to add variety to your table, and use local fresh produce, pick up some winter radishes (and I added beets). All of the sometimes harsh flavor punch these two sometimes impart baked out, yielding a light pleasant dish. Enjoyable to smell, with a nice texture and taste.
Next time, and there will be one soon, I will improve on the presentation, and make cleanup a bit easier - somehow. It could be garnished and sprinkled with a number of things, but I enjoyed the pure and simple character of the recipe.
