Love this. Never had a delicata before and was surprised and impressed that the skin was edible. Makes prep a whole lot easier. One night, hubby was making his famous stir fried rice for dinner, and I prepared this using five spice powder and a few sesame seeds instead of the Rosemary and maple (used the mustard)

If I were to try this again, I'd lower the temperature to 375° - 400°, cut the onion a bit thicker and perhaps substitute lemon juice & zest for the mustard.
We put some of the seeds in with all the ingredients including broccoli, orange pepper, and ground turkey and it turned out great!
Liked it as made, but next time will use 1 1/2 onions. They cooked up nice and sweet too.
Just made this and really liked it! Even my husband who's not a "squash" person thought it was pretty good! Will make again!
