Your rating: None Average: 3.8 (186 votes)

This rice, spinach and Cheddar pie is a cinch to prepare—especially if you have leftover cooked rice. If you don’t, follow package directions for 4 servings to get about 3 cups cooked rice. Serve with steamed artichokes with light mayo mixed with lemon for dipping.

I'm making this tonight with Greek seasoning mushrooms and feta! Using instant brown ice... I'll let you know how it is. Topping with a little parmesean too.

This was really good! I think next time I will grate the cheese to get it more uniformly distributed throughout the dish. I used Trader Joe's frozen brown rice, saved a ton of time. This would probably also be good with feta.

Quick, easy and Delicious! Will do again

I just made this tonight. I followed the recipe except I added about 1 cup diced Shiitake mushrooms (no stems) and used Brown basamati rice to mine. Husband and I LOVED it...Can't wait for lunch leftovers tomorrow. Next time I make this, I will probably add a bit more garlic. However, I did pair this dish with a mixed greens salad and the Roasted Garlic Dressing recipe I found on this site.
